Rubine Salmon with Red Bell Pepper Sauce Recipe

Salmon Fish - 200g
Garlic - 2 Cloves
Baby French Beans - 50g
Olive Oil - 2 Tbsp
Salt & Pepper

Red Bell Pepper Sauce
½ Lemon - Squeeze Fresh Lemon Juice 2 Tbsp
Red Bell Pepper - 200g
1 Red Onion
3 Peeled Garlic
Dried Oregano - 1 Tsp
Salt - 1 Tsp
Black Pepper - ½ Tsp
Coarse Chili Powder - ½ Tsp
Smoked Paprika Powder - ½ Tsp
Olive Oil - 2 Tbsp

Instructions

1) Combine red bell pepper, red onion and garlic. Marinate with dried oregano, salt, black pepper & olive oil. Bake until tender over 200°C for 30 min.
2) Transfer to blender. Add in lemon juice, chili powder, smoked paprika powder and olive oil. Blend until smooth.
3) Fry garlic slices until fragrant, add in baby french beans. Stir fry for 3 minutes. Remove and set aside.
4) Salmon fish season with salt and pepper.
5) Pan fry salmon fish, place salmon skin side down. Cook until golden brown.
6) Turn fish over and cook for 2 minutes.
7) Pour red bell pepper sauce in a serving plate. Place french beans and fish on top.
