Rubine Mutton Korma Recipe




‘Korma Style’, a classic Indian cuisine where chicken or mutton braised with yogurt, flavoured with spices and added vegetable. Always perfectly eat with rice or ‘roti’. It can be mildly spicy or you can add in more chilies to make it super ‘HOT’.




Recipe

Marination
Mutton - 600g
Salt - 1 tsp
Ginger Paste - 1 tbsp
Garlic Paste - 1 tbsp
Red Chilli Powder - 1 tbsp
Coriander Powder - 1 tbsp
Turmeric Powder - ½ tsp
Yogurt - 1 cup (Greek Yogurt)

Other Ingredients
Onion - 100g
Oil - 5 tbsp
Green Chilli - 2 pcs
Coriander - 2 stalks
Water - 500ml

Spices
Cloves - 5 pcs
Cardamon - 3 pcs
Cinnamon stick - 1 pc
Garam Masala - 1 ½ tsp
Salt and Sugar to taste

Instructions

1) Wash and drain mutton. Put in a bowl, add in all marinade ingredients. Mix and coat mutton evenly. Cover and marinate in fridge for 2 hours.
2) Onion slice thinly. Preheat oil. Stir fry onion until golden brown over medium low heat. Drain oil and let cool. Blend coarsely.
3) Chop green chillies and coriander, set aside.
4) Use remaining onion oil, add in cloves, cardamom and cinnamon stick. Stir fry until fragrant.
5) Add marinated mutton. Stir fry for 10 minutes. Add in green chilies, fried onion and garam masala. Cover and cook for 10 minutes over medium low heat.
6) Add water, cover and cook for 1 hour or until mutton is tender (low heat). Stir occasionally.
7) Add salt and sugar to taste. Add chopped coriander and simmer for another 10 minutes.
