Rubine Beef Rendang Recipe

Recipe

Spice Paste
Shallots - 12 pcs
Garlic - 5 cloves
Ginger - 20g
Galangal - 20g
Slice Lemongrass - 3 pcs
Crush Lemongrass - 2 pcs
Turmeric - 1 pc

Ingredients
Beef - cut into cubes - 1kg
Coconut Paste (Kerisik) - 3 Tbsp
Chili Paste - 4 Tbsp
Coconut Milk - 200ml
Turmeric Leave - 1 pc
Cinnamon Stick - 1 pc
Star Anise - 2 pcs
Tamarind Slice - 1 pc
Cooking Oil - 5 Tbsp
Sugar - 1 ½ Tbsp
Salt (to taste)

Instructions

1) Combine spice paste ingredients, add some water. Blend into smooth paste.
2) Heat oil in a wok. Add in spice paste and chili paste. Stir to combine.
3) Add in cinnamon stick and star anise. Stir until aromatic then add in beef. Cook over medium heat.
4) Add in coconut milk. Cook until beef almost cooked, add in turmeric leave, coconut paste, crushed lemon grass and tamarind slice.
5) Cover lid and turn to low heat. Simmer for 60 minutes until the meat is tender and liquid has dried up.
6) Add in sugar and salt to taste. Ready to serve.
